Muffins recipe

I got a request by a fellow swaper (is that a word?) for the recipe I used to make the muffins in this post. I am glad she asked! Here is where I got the original recipe, which I had to transform a little to match what I got in the cupboards. I am not quite sure how to translate everything but did my best.



SNOW MUFFINS
12 regular cupcakes

Original recipe by Linda-Marie Kruusvall

Muffins
100 g butter
2 eggs
1 cup sugar
1 tbsp vanilla sugar
Juice and
chopped peel
from 1 orange
1 cup flour
1 tsp baking powder

Snow
3,5 tbsp cream
100 g dark chocolate, bitter (in the original it says white chocolate, which makes a lot more sense!)
3/8 cup sugar flour
3 tbsp coconut rasp

  1. Melt the butter in a casserol, let it cool down a bit.

  2. Whip eggs, sugar and vanilla sugar. Add the melted butter, orange peel and juice, flour and baking powder. Stir until smooth.

  3. Scoop into cups until filled about 3/4 . Bake at 400 F for 15 min. Let cool.

  4. Snow: Cook the cream and add the chocolate in pieces. Remove from heat and stir until dissolved. Add sugar flour and stir until melted. Spread onto the cool muffins and strew coconut rasp on top.
